Disadvantages of charcoal grills:
Longer heating times. Charcoal grills take an average of 15-20 minutes to reach the proper cooking temperature (not including the time it takes to light the charcoal), whereas gas grills can be lit immediately and take about 10 minutes to reach cooking temperature. There are also several different ways to start a charcoal grill.
Fuel costs can add up. A 20-pound propane tank will provide about 25 days of cooking time, while a 20-pound bag of charcoal will only grill three times. The type of charcoal also changes the flavor of the food. A 20-pound bag of clean-burning hardwood/lump charcoal costs between $35 and $40.

Typically, charcoal grills are hotter than gas grills. The temperature of the grill has to reach at least 600 degrees Fahrenheit to cook delicious meat.
